Dukes of Topsail Sound

Raised in Topsail Sound, NC
Located a short two miles from the New Topsail inlet, the constant flow of blue green nutrient rich water from the Topsail Inlet runs over the lush spartina grass and into Topsail Sound. The cool water mixes with the tidal pools hidden between the barrier island of Topsail Sound and is bursting with phytoplankton that funnels through the farm bathing the oysters to salty perfection.
These unique oysters are 2 years old and average 32 ppt salinity. The Dukes are also accompanied by a note of sweetness due to the larger adductor muscle they possess from our rigorous tumble schedule where they are worked through our long line system in order to meet our “meat to shell” standards. The terrior from the vast pines of holly shelter game-land and purity of the untouched Lea Hutaff Island proved a healthy environment for the oysters to grow.

01 TASTE
Open ocean salt engulfs the nose and palate as soon as the shell hits the lips, then quickly sways the taste buds with incredibly sweet, almost scallop-like flavors
02 SALINITY
Extremely high 33PPT
The warm summer sun raises the temperature of tidal pools, increasing the salinity and leaving the oyster to pump this salty seawater
03 MERROIR
Blue-green nutrient rich water from the Topsail inlet run over the lush spartina grass, sandy mud-mixed oyster beds, and into Topsail Sound
04 TERROIR
The vast pines of Holly Shelter Game Land and purity of the untouched Lea-Hutaff Island provide a healthy environment for the oysters to grow
